Potato dumplings with chive sauce

The Kasspress dumplings

Ingredients for 6 servings:

  • 250g dried bread cubes
  • 250ml hot milk
  • 6g salt, pepper
  • 1 small onion, finely diced
  • 70g clarified butter (or butter)
  • 2 whole eggs
  • 160g Emmental or mountain cheese, cubed
  • a little clarified butter or butter for frying

Method:

  • Add salt and pepper to the bread cubes; then mix everything together with hot milk and leave to stand for 20 minutes
  • Fry the diced onion in clarified butter until lightly golden brown, then mix into the mixture whilst still hot; leave to stand for 15 minutes
  • Fold in the eggs and cheese cubes
  • Divide into 12 small portions
  • Heat a little clarified butter (or butter) in a frying pan and fry the cheese dumplings on both sides until golden brown

The chive sauce

Ingredients:

  • 40g butter
  • 20g plain flour
  • 300ml milk
  • 300ml whipping cream
  • 25g freshly chopped chives
  • Salt, pepper

Method:

  • Briefly toast the butter and flour in a pan until light brown, then pour in the milk and whipping cream; bring to the boil once
  • Simmer gently over a low heat for at least 10 minutes
  • Add the chives, salt and pepper

Suitable garnishes:

  • rocket or cress
  • A slice of fried bacon
  • Crispy onion rings
