Our Christmas menu: Poppy seed parfait with a sour cherry and ginger ragout

As the famous saying goes: all good things come in threes. Today, Renate Winzer from the Hotel Winzer presents the third and final course of this year’s Christmas menu: poppy seed parfait with royal jelly and sour cherry and ginger ragout.
A sweet temptation with a long history
Here in Austria, poppy seeds are also known as the ‘grey gold of the Waldviertel’, as they are grown here on a large scale. Their cultivation dates back to the 13th century. Poppy seeds were used as a medicinal plant and for the production of poppy seed oil. Poppy seeds have become an integral part of Austrian cuisine. They are often used in traditional desserts such as yeast dumplings or, as here, in a poppy seed parfait.
Another highlight that provides a truly special taste experience is royal jelly, also known as queen bee food. As the name suggests, this special elixir comes exclusively from the queen bee. Royal jelly contains a wealth of vitamins, minerals and trace elements and contributes to improved general well-being. So our dish is not only healthy but also incredibly delicious!
Ingredients for the poppy seed parfait
• 4 egg
yolks• 140 g sugar•
120 g poppy seeds (ground)
• 500 g cream (whipped until stiff)
• Vanilla
sugar• 1 pinch of salt
Method
Beat the egg yolks and sugar with a pinch of salt and vanilla sugar over steam until frothy. Remove from the steam and continue beating until a creamy mixture forms. Then gently fold the cream and poppy seeds into the egg yolk mixture. Pour into small moulds and place in the freezer for a few hours.
OUR TIP: It’s best to prepare the poppy seed parfait the day before!
Ingredients for the sour cherry compote
• 600 g sour cherries (drained – reserve the juice)
• 2
lemons• 2 oranges•
2 cinnamon
sticks• 1 tsp cinnamon•
30 g sugar•
ginger (to taste)
• 1 pinch of
salt• a dash of red
wine• 2 tbsp cornflour
Method
Bring the sour cherry juice to the boil with the orange and lemon zest, cinnamon and cinnamon sticks, along with the red wine, sugar, salt and ginger. Thicken with cornflour. Then add the sour cherries and season to taste.
Nothing now stands in the way of a culinary Christmas celebration with your loved ones.
