Chopped chicken with ribbon pasta and rocket
Ingredients for 4 people:
- 600g chicken breast fillet, cut into 2 cm thick strips
- 1 teaspoon paprika
- a little oil
- A pinch of salt
- 1 onion
- A pinch of chilli powder
- Chicken stock or water
- 1 teaspoon cornflour mixed with approx. 1/8 l water
- 1 red pepper (diced)
- 1 small courgette (diced)
- 120g ribbon pasta (cooked al dente in salted water)
- 300g rocket
Method:
- Heat the olive oil in a frying pan and fry the chicken until golden brown
- Remove the meat from the pan
- Add the onion to the pan and fry in olive oil until golden brown
- Briefly sauté the paprika
- Pour in the chicken stock and add the chicken breast strips
- Simmer for approx. 10 mins over a low heat
- Meanwhile, briefly fry the diced peppers and courgettes in oil
- Thicken the chicken stir-fry with cornflour and season to taste with salt and chilli
