Delicious creamy coconut and curry soup for cold days

Renate Winzer from the Hotel Winzer recommends a delicious creamy coconut and curry soup for cold winter days, because: it warms you right up from the inside and, what’s more, tastes a bit like a holiday.
Historical spices
Curry – a spice whose history is as varied as its ingredients: the origins of the curry blend date back to the 18th century. During the colonial era of British India, the English gentlemen were so overwhelmed by the variety of Indian masalas that they had a curry blend created to suit European tastes. Most curry mixes contain 13 different spices. Turmeric and cumin are found in almost all curry mixes. And as the various types of curry are blended from different spices, each mix has its own unique flavour. For the recipe tip below, simply choose the curry mix that you like best.
Ingredients for 4 people:
• 1 small onion•
A little
butter• 1 heaped tsp curry
powder• ¾l coconut
milk• ¼l whipping
cream• 1 pinch of
salt• 1 level tsp cornflour•
A little whipped cream and approx. 1 tsp cooked beluga lentils to garnish
Method:
First, finely dice the onion and sauté in a little butter. Add the curry powder, sauté briefly, then immediately pour in the coconut milk and cream. Simmer for approx. 10 minutes. Then mix the cornflour with cold water and stir into the soup. Bring to the boil again and season with salt to taste.
Serve with golden-brown ham croissants fresh from the oven

• Frozen puff
pastry• 4 slices of
ham• 2 tbsp
quark• 1 tbsp sour
cream• Pinch of
salt•
Pepper• 1 egg• Sesame
seeds
Method
Mix the quark, sour cream and seasoning well. Cut the puff pastry into 4 equal-sized triangles, each 15 cm long and 9 cm wide. Spread the quark mixture over them, place a slice of ham on top and roll up the pastry with the filling inside. Place the croissants on a baking tray lined with baking paper, brush with egg yolk and sprinkle with sesame seeds. Bake the croissants at 180°C for around 15–20 minutes until they are golden brown.
